<p>So <a href="http://www.momsneedtoknow.com/2009/01/05/why-i-love-acme-part-4-22776-for-2015/" target="_blank">as you may have heard</a>, I have an obscene amount of Bisquick now.  Fifteen boxes, to be exact.  And while my kids eat pancakes or waffles 4 out of 7 days per week <em>(I make a triple-batch on Saturday or Sunday and freeze the rest),</em> I was looking for some recipes that, not only would <a href="http://www.momsneedtoknow.com/2008/12/29/cooking-for-your-family-even-when-its-boring/" target="_blank">my family of picky/boring eaters</a> like, but would also fit in with my Weight Watchers diet.</p>
<h2 style="text-align: center;"><span style="color: #ff0000;"><em><span style="text-decoration: underline;">Salsa Chicken Fiesta</span> </em></span></h2>
<h2 style="text-align: center;"><span style="color: #ff0000;"><em><span style="color: #000000;">4 Points per serving</span></em></span></h2>

<p>I made this last night and everyone loved it! (photo courtesy of Betty Crocker, since I forgot to take a picture)</p>
<p>Serves 6</p>
<p><strong>Ingredients:</strong></p>
<ul>
<li>2/3 cup Bisquick Heart Smart mix</li>
<li>2 Tbs water</li>
<li>1/4 cup fat free egg substitute, or 2 egg whites</li>
<li>1 1/2 cups shredded reduced-fat Cheddar cheese (we actually used Cheddar-Jack)</li>
<li>3 (about 1 lb) boneless, skinless chicken breasts, cut in to 1/2&#8243; cubes</li>
<li>1 1/4 cup salsa</li>
</ul>
<p><strong>Directions:</strong> </p>
<p>1.  Heat oven to 400.  Spray an 8&#8243; or 9&#8243; pan with non-stick spray.  Combine Bisquick, egg substitute/whites and water and spoon/spread in to pan.  Top with 1 1/4 cups of the cheese</p>
<p>2.  In a non-stick skillet sprayed with non-stick spray and over medium-heat, saute the chicken until the outside turns white (do NOT cook completely).  Stir in salsa and heat until hot.</p>
<p>3.  Spoon chicken/salsa mixture over batter/cheese, leaving 1/2&#8243; room on all sides</p>
<p>4.  Bake 22 to 25 minutes or until the edges are dark golden brown.  Sprinkle with remaining cheese and put back in oven for 1-3 minutes or until cheese is melted.</p>
<p><em>Serve with lettuce, diced tomatoes and fat-free sour cream, if desired (don&#8217;t forget to add the Points for the Sour Cream).</em></p>
<p><strong>Cost?</strong>  The Bisquick was pretty much free (I ended up paying pennies per box), chicken was about $1 (I never pay more than $2/lb), the egg whites cost about $.25, the cheese was about $1.50 and the salsa I probably paid $1 for (based on what I usually pay).</p>
<p style="text-align: center;"><strong><span style="color: #ff0000;">Total for recipe:  $3.75</span></strong></p>

<p>And just as an FYI - <strong>did you know that you can use coupons at Michaels, JoAnn&#8217;s and AC Moore interchangeably?</strong>  Yes - that&#8217;s right!  You can walk in to a Michaels with an AC Moore or JoAnn&#8217;s coupon, and as long as there is a store within your general area, they will take it! (example:  the closet Michaels to me is 20 minutes away, but I can use their coupons at the AC Moore that is only a mile away.  However, the closest Hobby Lobby is Ohio, so they wouldn&#8217;t take that coupon at my local store)</p>

<p><strong>Those of you who read my grocery posts know how frequently I mention &#8220;All You&#8221; magazine when I do coupon matchups</strong>.  Some of you may have been wondering what the heck I&#8217;m talking about!</p>
<p>All You is a magazine put out by Walmart&#8230;.and while I have issues with Walmart, this magazine is consistently the best one for coupons every month!</p>
<p><strong>The cover price is about $2.50 at the stores and frankly, is worth every penny!</strong>   But we like things cheaper, don&#8217;t we?</p>
<p>If you are interested in subscribing, I think I&#8217;ve found the cheapest place on the Internets.  <strong>You can get 18 issues for only $24.  Almost every other place that I checked was $24 for only 12 months!</strong>  It is also where I got my subscription <em>(although the current price is not nearly as good a deal as it was, but it is still about 33% cheaper than subscribing at the All You website or even the subscription cards they put in the magazine itself!).</em>  You know how your nieces and nephews are always sending you requests for magazine subscriptions as part of their school fundraiser?  This is one of those sites!</p>

<p style="padding-left: 30px;">Click on Shop Now</p>
<p style="padding-left: 30px;">In the next window, use the Search Bar to search for All You</p>
<p style="padding-left: 30px;">It should come up! (if it doesn&#8217;t the first time, use the drop-down menu to confine your search to magazines and run the search again)</p>
<p>As I said, this is the same place where I got my subscription, and it did take the full 12 weeks for my issues to start coming. </p>

<p>In a single transaction, buy 3 of the $10 Jumbo packs.   <strong>Not only will you get $15 in Catalinas, you will get an additional $5 Catalina (good for any baby product)</strong> as part of the Start Healthy Stay Healthy Baby Deal (Get $5 wyb $25)</p>
<p><strong>Two notes:</strong> </p>
<p>I don&#8217;t know if this is a glitch or simply an unadvertised participating product, but it was working this morning.  The ad shows that it is the Club Pack that is included in the Start Healthy, Stay Healthy deal, not the Jumbo.</p>
<p>While you are not supposed to roll the Catalinas on P&amp;G Products in this deal (and I have heard that a few people have not been receiving the next set of Catalinas when they try), you CAN use the $5 Start Healthy Catalina to do a second deal.  I didn&#8217;t want to risk not getting a 2nd set of Catalinas, so here is what I did this morning:</p>

<p>So yes, I did pull $54 cash out of my wallet <em>(which was hard for me to do)</em>, but in exchange for that I have 6 packs of diapers and have $35 in Catalinas that I can use for grocery shopping! </p>
<p><strong>My net cost for 6 packs of Pampers was $19 OOP.</strong>  Considering that is a 6-week supply and my weekly diaper budget is $7, it&#8217;s a pretty good deal!</p>
