Love this idea! As usual I had no clue what to cook for dinner. I wasn't sure if I had any dressing but I remembered my husband saying he wanted bbq chicken sandwiches one night. I put 1 lb of frozen chicken breast and a bottle of freebie bbq sauce in the crockpot at 350 which I believe would be considered hi. Less than 2 hours later it was done. I shredded it and put it on rolls (crusty store made french rolls to be exact) and it was awesome!
Thanks Mindy.

I make a similar recipe except I also add a can of ff cream of mushroom soup and a package of lite cream cheese at the very end. Makes a yummy lowfat alfredo italian chicken.

Follow up message:

I just ate my dinner and it was pretty good! I bought the stuffed red peppers (stuffed with provolone with Proscuitto ham) (www.fatheadpeppers.net) and cut it up and added it to the dish and boy did that make it even more amazing! Thanks, Mindi!

I actually make a similar dish in the oven rather often--just frozen chicken breasts and some Italian dressing (or italian spices, garlic salt, mild olive oil, and apple cider vinegar...kind of the same thing in a pinch). I get solid chicken breasts and not the shredded stuff, but it tastes great and requires minimal effort (just put in in a pyrex and jam it in the oven at 350 for twenty to thirty minutes). Always a hit with the fam!

Mindi,

I just put this in the crockpot. I'm using my free Kraft Tuscan Italian House dressing. FYI....Alton Brown has a great recipe for cooking brown rice. It's easy to prepare....best rice you'll ever eat. He knows his stuff. Thanks for the tip I didn't want to slave over a stove tonight!

Hi Skye! I think I met your MIL the other day when we stopped in to see Brad! :-)

I have 3 crockpots and all of them are Rival brand...and I love them!

If you can, get one with an automatic timer or it (so that it shuts off or switches to "warm" after the cooking time is over. Rival calls them the "SmartPot".) I think that most of them these days have removeable stoneware crocks, but just in case, make sure that you get one that IS removeable. My mom has an old one that isn't removeable and it is an absolute pain in the a$$ to clean!

FYI - I have a "Little Dipper", a 4 Quart one and a 6-Quart one. I wouldn't automatically get the 6 quart one just because you have 2 more in your family than me. You want to save the big one for really big jobs (roasts, large batches of things, etc) because if you use too big of a crock pot for what you are cooking, the food will cook too fast and it won't turn out correctly!

I use my 4 Quart more than any other!

Wow, love you as usual! I just came back home from ACME and was wondering what I was going to cook using all the chicken I got. I also bought rice and I have the FREE Italian Dressing AND I bought the brussel sprouts on sale at Acme last week. What a coincidence! And also I never used my Crockpot that I got for cheap-cheap-cheap in CVS last Christmas Time. So this is going to be my first time. Thanks for the tip! Kisses!!! :)
